Making Sugar Free Glorious Morning Muffins.


One of my favorite muffins are the Glorious Morning Muffins made with raisins and carrots. They are a lot like carrot cake but much better. For those who want to watch their sugar intake here is a sugar free recipe that uses splenda that you can prepare in your own kitchen. The glorious morning muffin recipe is as follows:

Glorious Morning or Morning Glory Muffin Sugar Free Recipe


INGREDIENTS
2 cups all-purpose flour
1 cup splenda
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 cups shredded carrots
1/2 cup raisins
1/2 cup chopped walnuts
1 apple - peeled, cored and shredded
3 eggs
3/4 cup vegetable oil
2 teaspoons vanilla extract


DIRECTIONS
Preheat oven to 350 degrees F.
Grease 12 muffin tins.
In a large bowl, mix together flour, splenda, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, and apple.
In a separate bowl, beat together eggs, oil, and vanilla. Stir egg mixture into the carrot/flour mixture, until moistened. Pour batter into muffin cups.
Bake for 20-25 minutes.
