Making Sugar Free Pumpkin Muffins.

Pumpkin Muffins are healthy, moist and delicious. For those who want to watch their sugar intake here is a sugar free recipe that uses splenda brown sugar that you can prepare in your own kitchen. The sugar free splenda pumpkin muffin recipe is as follows:

INGREDIENTS

1 cup whole wheat flour
2/3 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon pumpkin spice
1/2 teaspoon nutmeg
1/2 tespoon salt
1 cup canned pumpkin
1/4 cup applesauce
2 beaten eggs
1/3 cup splenda brown sugar
1/4 cup milk (lowfat or reduced fat if desired)
2 tablespoons cooking oil
1/2 cup finely chopped apple
1/4 cup chopped walnuts


In large bowl combine all dry ingredients (flour, wheat flour, baking powder, pumpkin spice, nutmeg & salt) and make a well in the center of the dry mixture.
In another bowl combine wet ingredients (pumpkin, applesauce, eggs, splenda brown sugar, milk and oil.)
Hold out chopped apples and walnuts for now.
Add wet mix to flour mixture.
Stir just until moistened.
Gently fold in apples and walnuts.
Put muffin papers in muffin tins and spray lightly with PAM.
Fill and bake at 350 degrees for about 20-25 minutes. Let cool. Enjoy.
